Frequently Asked Questions
What is a baking emulsion, and how is it different from an extract?
A baking emulsion is a concentrated, water-based flavouring in which the flavour is suspended in a stabilized base, while most extracts are alcohol-based. Alcohol can evaporate in the oven and take some flavour with it, so emulsions hold their flavour better through baking. The result is a bolder, bakery-style taste in your finished goods.
Which flavours are available?
Collective Aromas Co. offers ten emulsions: Almond, Butter, Butter Vanilla, Madagascar Style Vanilla, Clear Vanilla, Caribbean Rum, Rye, Orange, Lemon, and Lime. Every flavor comes in a 1-gallon (128 fl oz) size.
What can I use these emulsions in?
They work in cakes, cookies, cupcakes, frostings, buttercreams, fillings, glazes, and other desserts. Many flavours also suit ice cream, and you can use our Caribbean Rum and Lime emulsions in beverages. Rye Emulsion is especially good for breads and rye-style baked goods.
How much emulsion should I use?
For most recipes, you can replace an extract with an equal amount of emulsion. Because the flavor is concentrated, we suggest starting with that amount and adjusting to taste in later batches.
Are the emulsions heat-stable?
Yes. They are made to hold their flavor at baking temperatures, so your cakes, cookies, and breads taste as good out of the oven as the batter did going in.
Will the Clear Vanilla Emulsion change the color of my frosting?
No. Clear Vanilla Emulsion is made for white and light-colored recipes such as royal icing, white buttercream, and wedding cakes. It adds classic vanilla flavor without tinting your icing.
Do the emulsions contain alcohol?
Our Butter, Clear Vanilla, Orange, and Lemon emulsions are alcohol-free. For the other flavors, please check the product label or contact us for details. The Caribbean Rum Emulsion is a flavoring, not an alcoholic ingredient.
Are your emulsions kosher and made in the USA?
Many of our emulsions are kosher certified and made in the USA, including Almond, Butter, Butter Vanilla, Clear Vanilla, Rye, Orange, and Lemon. Please see each product's label for its specific certifications.
Why buy the 1-gallon size?
The gallon size suits bakeries, cake decorators, caterers, and home bakers who bake often. It gives you consistent flavor across large batches and costs less per ounce than buying small bottles.
How should I store my emulsion?
Keep the container tightly closed and store it in a cool, dry place away from direct sunlight and heat. Shake well before each use, since some natural separation can occur. Check the label for the best-by date.
